Just wanted to report that I did finally make those Easter treats I spoke of. It was my daughter's birthday on Sunday, and since I'd already bought for those things back at Easter, I went ahead and made them. They aren't hard--a brownie base; a nest of crunchy Chinese noodles coated in melted butter and marshmallows; jelly bean eggs; and a Peeps Mama bird on top. They look cute and taste good, but it is sort of death by sugar.

I have lots of marshmallows left over from that Easter treat. Tonight I bought for s'mores.

I'm not a fan of marshmallows but graham and chocolate is magic.

I'm going to try making them in the oven. I've used the microwave in the past, but the marshmallows puff up weirdly in that.

My husband is not a s'mores fan. He's never said exactly why, but it could be the marshmallows.

You could try substituting marshmallow cream for the marshmallows themselves.

It's a spread that comes in a jar and slightly less sugary because it lacks the powdered sugar that coats standard 'mallows.

Well, that's true. I hadn't thought of that. However, I have all these marshmallows I overbought for that Easter treat, and I need to use them up.

Btw, I'm never making those things again. They were cute to look at, but a chore to eat. Just way too sweet. S'mores will be subdued compared to them.

There is a show on the tastemade channel called Struggle Meals.

Each episode features a segment where the chef makes a dish based on a viewer request.

On a halloween themed episode he made a casserole completely out of leftover candy and sweets.

It failed.

Other than some occasional goofiness his show is a great resource for making truly inexpensive but tasty dishes.

I think he'd have done fine if he'd just left off the sour patch candies and the sucker at the end. Chocolate, peanuts, Graham crackers, and vanilla pudding should have worked. Part of what ruined my Easter treats, imo, was the jelly bean eggs. That flavor profile didn't work well with chocolate brownies and marshmallows.

I only eat Jelly Bellys, for their array of flavors.

Standard jelly beans don't pass muster.

Jelly Bellies are far and away the best, although Kroger's Private Selection might just be Jelly Bellies under a house name. This Easter they sold out fast, and I was left with Starburst, which is adequate but not the best.

Someone at church this morning brought white cupcakes with coconut icing dyed green and a little Peeps on top. I didn't eat one, but I'm guessing that might be tolerable.
